Used can of Bacardi pina colada frozen drink mix with a plain yellow cake recipe (in the Kitchen Aide mixer recipe book) to create Val’s Next Kind of Cake, v1.2 – the PC cake
[photopress:pinacoladacake.jpg,thumb,alignleft]How?
Baked cake, removed from oven… inverted cake to plate, poked a bunch of holes in the cooling cake w/end of wooden spoon,
mixed pina colada + some 10x powdered sugar and poured syrupy mess into holes, refrigerated cake for a couple hours,
then made my version of buttercream pina colada icing — are you ready? 2 sticks of butter (cold), 2 lbs of 10x powdered sugar, 1/2 tsp Madagascar vanilla, the rest of the mix+10x mess and whipped it for about 3 minutes in the trust Kitchen Aide.
it is indescribably delicious. Damn skippy. Goes in the book with Val’s Next Kind of Cake, v1.0 — the lemonade cake.
As one can plainly tell, I totally suck in writing out recipes. Just wait until I try to explain the crunchy good white chocolate/butter/oatmeal/brown sugar stuff I put on the top of a cherry pie. Real white chocolate. Just like real Madagascar vanilla.
